Around the charcuterie
Alongside the charcuterie come the Corsican cheeses: ewe's tomme, tomme with maquis herbs, goat's cheese, brocciu and passu brocciu, a fig jam for the sweet note. The mixed board gathers island charcuterie and cheeses on a single platter.
For the crudités, the anchoïade board puts homemade first — anchoïade and aïoli made on site, carrots, cucumber, cauliflower, endives, radishes and cherry tomatoes. The fruit and vegetables come from the local grower: short supply chain, no fuss about it.

The right match
A Corsican board calls for a Corsican glass. The cellar follows the island: an Aghione white, a Calvi de Lumio rosé, Sartène reds, and the wines of the nearby Ventoux. A fresh white on the cheeses, a rosé on the charcuterie, a red when the evening stretches on — and a sharing carafe when the group is a big one. The terrace runs until 11 pm, the evening until 12:30 am.
